Chemex Brew Guide

Brewing with a Chemex creates a beautifully clean and bright cup, with thick filter papers removing more of the sediment and very fine particles from ground coffee. It's a pawfect choice for brewing light and medium roasts, for even more flavour clarity.

What you'll need:

  • A Chemex coffee maker
  • 30g of filter ground coffee
  • 500g of water at 94°C
  • Your favourite mug

Step 1

Boil your water to 94°C or just off the boil. Fold the Chemex filter paper in half, then in half again to create a quarter circle. Open it into a cone with one side having three layers of paper. Place the thicker three-layer side against the spout. Pour a little hot water through to rinse the filter paper and preheat the glass, then discard the water.

    Step 2

    Place your prepared Chemex on a scales and reset. Add 30g of filter ground coffee and level the bed.

    Step 3

    Start your timer, then pour 50g of boiled water evenly over the grounds, aiming to saturate all of the coffee. Leave to bloom for 30 seconds.

    Step 4

    At 00:30, pour slowly to 250g, moving the kettle in a gentle circular motion to keep the coffee bed level. Continue to pour in slow circles and in stages, to add the remaining 250g. Aim for all of your water to be in by 2:30 on the timer.

    Step 5

    Give the wet grounds a gentle stir to ensure they are evenly submerged. Then wait a little longer for all of the coffee to be drawn down through the filter. Once the brew time has reached around 3:30-4:30, remove the filter paper.

    Your coffee is ready to pour and enjoy!
